One pot corned beef stew recipe

This is a cheap and cheerful family recipe of mine that is easy to make, cheap to buy and goes a long way. This is a recipe that even my kids will eat - and ask for seconds! And that's really saying something. They don't even complain about the vegetables. It's also a good one to get them involved in helping to cook it. The corned beef breaks apart in the stew anyway so they can chop that up easily and it doesn't matter if it's not neat. It's a pretty balanced recipe with protein from the meat, carbs from the potatoes and 2-3 of your five a day from the veg. It's super tasty and a total comfort meal for those days you need the equivalent of a hug from your food. It's a doddle to make all in one pan and you can make a heap of leftovers that will heat up lovely for another day. This costs less than 89p per serving. This can be a high salt recipe so feel free to use a reduced salt gravy and corned beef if you are concerned about salt intake.

Ingredients

  • 1400 g potatoes
  • 2 cans corned beef
  • 1 kg frozen mixed vegetables
  • 170 g gravy
  • Water

Instructions

  • Wash and chop the potatoes into chunks or quarters. You can peel your potatoes if you like but I can never be bothered.

  • Cover the potatoes with water and bring to the boil. Then simmer until parboiled.

  • Add the frozen veg in with the potatoes. Add a little extra water so the potatoes/vegetables are just covered if required.

  • Simmer until the vegetables are cooked.
  • Meanwhile open and chop the corned beef into chunks. If you have kids mine love to help chop the corned beef.

  • When the veg is cooked, add the gravy to the pan and stir until it's a consistency that yoy like. We like ours pretty thick. I add a little, then stir and then repeat until I'm satisfied.

  • Then add the chopped corned beef to the stew and stir until fully mixed and serve up.

  • Keep any leftovers for reheating another day.
