Dairy free cinnamon and raisin oatmeal cookies
This is our family's go to cookie recipe. It's a great recipe to get the kids involved in helping and they always enjoy the eating part too. I especially like these dairy free cinnamon and raisin oatmeal cookies in the autumn and winter as the nutmeg and cinnamon make the whole house smell fragrant. They are great any time of year though. - 1 tbsp flaxseed meal
- 250 ml rapeseed oil You can use any oil or dairy free spread in a pinch
- 150 g raisin (or sultanas)
- 220 g dark brown soft sugar
- 330 g oats
- 2 free range eggs
- 1 tsp vanilla extract
- 1/4 tsp ground nutmeg
- 125 g plain flour
- 1 tsp ground cinnamon
- 1/2 tsp bicarbonate of soda
- 1/2 tsp sea salt
Pre-heat oven to 180c or gas mark 4.
Mix oil, eggs, sugar and vanilla in large mixing bowl.
Mix together flour, spices, bicarb of soda and salt and then add to the mixture in the large mixing bowl.
Mix in the oats and the raisins.
Grease baking trays or add baking paper to them.
Spoon on mixture to make cookie shapes.
Bake for 10-12 minutes until golden brown.
Allow to cool and then enjoy!
